French cuisine is like a grand theatrical production: it has rhythm, character, traditions… and sometimes even stories worth a novel. At the helm of this almost military-style organization is Auguste Escoffier, the chef who transformed kitchens into well-oiled orchestras. Thanks to him, the famous brigade was born: everyone at their post, everyone with their role, and above all, there’s no room for a false start—except perhaps with the soufflé, but even the best chefs forgive that.

And yet, amid all this rigor, there is also poetry… like the story of pêche Melba. This dessert wasn’t created by chance: Escoffier created it as a tribute to the opera singer Nellie Melba, after hearing her sing at the opera. Inspired, he envisioned a delicately poached peach, set on vanilla ice cream, drizzled with raspberry coulis. At the time, the dessert was even presented in an ice sculpture shaped like a swan! It was the first dessert named after a celebrity. It was a grand spectacle, reflecting the dining experience in luxury hotels, where every dish was meant to impress both the eyes and the taste buds.

Indeed, in these prestigious establishments, dining becomes an experience. The service is flawless, the plates arrive like works of art, and the guest discovers the famous concept of the menu: a sequence of dishes designed to tell a story. A build-up, contrasts, a memorable finale… in short, a true gastronomic journey.

With this in mind—combining tradition with the joy of sharing—we’ll be preparing three menus: two fairly classic options—one featuring meat, the other fish—and a third vegetarian option, because let’s face it, vegetables can really shine when they’re given the spotlight.

We are delighted to introduce you to this world, where precision meets creativity, and where even a simple catch can become legendary. Because, at its core, that’s what French cuisine is all about: a serious approach… but always with a touch of indulgence and a hint of elegance.
